Chocolate Peanut Butter Balls

I am all about quick and easy and while these take 20-30 minutes to mix and ball up, I love having them on hand when I need something to grab and go. They’re delicious but also offer you a great balance of fat, protein, carbohydrates, and fiber.

Chocolate Peanut Butter Balls

I got about 40 out of this but I also sampled as I mixed ;) 

·       2 cups rolled oats

·       1 cup peanut butter (I like salted to bring out more flavor)

·       1/2 cup honey

·       ½ cup ground flax seed

·       1 cup mini chocolate chips

·       1 tsp vanilla

I used my Kitchen Aid, which made the mixing go more quickly, so if you have one, use it or find your biggest mixing bowl and get your hands goopy- it’s worth it.

I like the batter a little stickier, as it helps them form better, so you may need to adjust the peanut butter or honey as you mix depending on the consistency you want.

I rolled into about 1 inch balls and store in an air tight container in the fridge. They won’t last long 😊
