This, my friends is hands down my favorite breakfast, and one that eat many mornings.
It’s quick, easy as can be, tastes amazing, and is great for those of us who don’t always like to cook. But seriously, even if you love to cook, try this.
Yes, it involves frozen food, white flour, and a little sugar but it’s still an incredibly healthful, nourishing, and satisfying meal.
We have gotten way too caught up in food rules and have been lead to believe that the only way to be “healthy” is to cut out sugar, eat pounds of veggies, and avoid white flour like the plague.
And so I ask, where has that gotten us? I see no one any healthier, only more food obsessed and stressed and confused about what to eat, and it’s just not a way I choose to live anymore.
Which is why I eat meals like this, and savor the peace of mind and pleasure that it brings me. Give it a try.
Ready for it…..
- 2 Trader Joe’s frozen scallion pancakes
- 1-2 tablespoons Trader Joe’s sweet chili sauce
- 2 eggs (Sometimes I do 3 if I’m really hungry)
In a pan over medium high, I add my pancakes and cover to give them a head start since they’re frozen.
After a few minutes, I’ll flip, spray or butter my pan, pop a couple eggs in and cover again.
I’ll give the pancakes another flip to brown the other side, then plate, drizzle with sweet chili goodness, and top with the eggs, a pinch of salt, and it’s time to eat!
