I am pretty dang excited about these new little snacks.
I was wanting to make my standard chocolate oatmeal peanut butter balls but I was out of chocolate chips.
Sooo, I got a little inventive! I had some old school chocolate graham crackers that I crushed up and mixed with flax and chia seeds, peanut butter, maple syrup, and a couple splashes of almond milk. And holy smokes are they good!
Gluten and refined sugar included because ALL FOODS FIT, y’all. Plus, sugar is sugar. So no matter if you’re using plain old white sugar or organic evaporated fruit crystals, it all digests the same; it’s just a matter of how much money you want to pay and the consistency you’re looking for.
I love the taste of maple syrup, plus I like the stickiness of that or honey for these little gems, so I went with that. You can also try agave if that’s what you’ve got on hand.
Okay, here you go! Call ’em what you want, I kept it simple.
Chocolate Peanut Butter Balls
- 1 cup crushed chocolate graham crackers
- 1/2 cup each ground flax and chia- because our bellies LOVE fiber
- 1/2 cup salted peanut butter
- 2 T maple syrup
- 2-3 T milk of choice
- 1 t vanilla
I warm and blend the PB, maple syrup, vanilla, and milk and then add all the dry ingredients and mix, mix, mix. They should hold together when you roll into balls, but not be super sticky. If they are, you can always add a little more flax.
