It’s Fall, y’all!
While I’m sad to see the sun start to disappear more and more, I can’t help but take in all the beauty around me. Yes, it also means that winter is a sneeze away but after having lived in the south from 2006-2016 I’m happy to have seasons back. Six straight months of 100 degree weather gets old really fast, but I sure do miss all that sunshine. Growing up in Buffalo left me with a deficit so I can never get enough of the stuff.
Something else that’s just oh so fun this time of year is pumpkin flavored everything. From savory to sweet, the stuff can be incorporated into so many recipes. I’m actually about to whip up a chocolate chip pumpkin bread that I’ve really excited about.
Speaking of, Trader Joe’s is known for all their pumpkiny products, and I’m always amazed how creative they get. I have yet to try all of them but so far my favorites are their:
So I got to thinking, what about a pumpkin smoothie? I’m a big pumpkin pie fan, obviously, so why not see if I can’t whip something up that tasted similar but offered more nutrients along with it.
What was born was one of the best smoothies I’ve ever had. It has all the creaminess and flavor of pumpkin pie, but with lots of protein, fiber, and vitamins, and minerals that turn it in a satisfying, wholesome meal. Plus, it’s plant-based, which I’m always a big fan of. There are a lot of ways to cut out animal products and you’d never miss them.
And what’s so great about smoothie, is that they’re easy to tweak to find the perfect combination for each person, so play around with it. Even after making it a few times, I’ve realized how much more pumpkin spice I like, so I just keep on adding!
This ain’t no dainty smoothie either. She comes with about 14 g of fiber and 28 g of protein so be prepared to be satisfied for hours.
Here we go!
Pumpkin Spice Smoothie
- ~1 cup unsweetened almond milk or even just water
- 1/2 cup plain, pumpkin puree
- 1/4 cup oats- optional
- 1 scoop vanilla plant protein (MRM is my favorite)
- one small frozen banana
- 1/2-1 tsp pumpkin spice (I go heavy)
- Spoonful of almond butter
- Handful of fresh spinach- optional
