It’s such a generic recipe title but this is truly my favorite way to eat salmon, and the twist here is that there’s no lemon juice.  The lemony flavor comes from the zest!  So good and simple, you can knock the prep out in five minutes.


Lemon Garlic Salmon

Serves 3-4 (or 2 if you’re eating with my husband)

  • 1 pound of salmon
  • 1 T lemon zest
  • 1 large garlic clove, minced
  • 1 T olive oil
  • 1/4 t salt

Preheat oven to 400 F and throw the salmon on a baking sheet.

Combine the zest, garlic, oil, and salt in a small bowl and spread over the salmon evenly.  Pop in the oven for 15-25 minutes, depending on the thickness, or until the center reaches 145 F.

So darn good!  We eat this alongside a baked Japanese sweet potato (life changing) and some kind of veg- clearly we did salad tonight- and boom.  Balanced, satisfying, and so friggin delicious.
