I took part, as a vendor, in A Taste of Fitness Sampler in downtown Columbus for women this past Sunday, and wanted to use this opportunity to show women that eating rich, delicious, and satisfying foods can be enjoyed everyday; even for breakfast. I made dark chocolate peanut butter balls mixed with oatmeal, honey, and flax seeds that knocked my own socks off. I can’t take much credit for how incredible these taste, but I’m not gonna lie, I was delighted over how much the women loved them! And the secret…. high quality dark chocolate chips. I went with Ghirardelli (can’t go wrong there) and pulsed them in a food processor to break them up a little bit, which of course meant more chocolate through these little gems:)

So here they are!

Chocolate Peanut Butter Balls

I got about 80 out of this but I also sampled as I went:)

  • 3.5 cups rolled oats
  • 2 cups peanut butter
  • 3/4 cup honey
  • 1 cup ground flax seed
  • 2 cups dark chocolate chips- leave whole or throw in a food processor to make smaller chunks

I used my Kitchen Aid, which made mixing this super easy, so if you have one, use it or find your biggest mixing bowl and get your hands dirty.

I rolled into about 1 inch balls and store in an air tight container in the fridge.
